Autumn at HIMI: Seasonal Flavours, Japanese Inspiration and Rich Autumn Ingredients

There’s something special about autumn dining. As the days grow shorter and the colours around us turn warmer, the ingredients coming into season become richer, deeper and more comforting. It’s a time of year when we naturally gravitate towards dishes with a little more depth, and at HIMI, our kitchen is embracing everything the season has to offer.

Our autumn menu brings together Japanese inspiration and the best of seasonal British and European produce, creating dishes that are full of character, colour and flavour.

A Taste of Autumn from the Grill

One of the highlights of our new seasonal offerings is Shika Kunko-yaki, our fallow deer loin dish from the grill.

Fallow deer is a wonderful autumn ingredient, offering a delicate yet distinctive flavour that works beautifully with the deeper notes of the season. Served with parsnips and salsify, this dish brings together rich, earthy flavours and seasonal ingredients in a way that feels perfectly suited to the colder months.

Cooked over the grill, the deer develops a beautiful depth of flavour, complemented by the sweetness of parsnip and the subtle earthiness of salsify. It's a dish that captures the essence of autumn dining at HIMI.

Seasonal Ingredients, Japanese Inspiration

At HIMI, our approach to cooking is rooted in Japanese izakaya culture, but with a contemporary twist. We take inspiration from traditional Japanese techniques and flavours, bringing them together with carefully selected British and European ingredients.

Autumn is an especially exciting time for this approach. Root vegetables, game and seasonal produce offer plenty of opportunities to explore different textures, flavours and cooking techniques.

Our kitchen continues to develop new dishes throughout the season, making the most of what's available and bringing something fresh to the table.

Something Seasonal to Drink

A good autumn meal deserves an equally thoughtful drink to accompany it.

Our seasonal drinks selection includes the Satsuma Spritzer, a refreshing combination of pét-nat wine, mikan liqueur and ginger. With its bright citrus character and gentle warmth from the ginger, it's an ideal aperitif to enjoy before your meal.

We're also introducing a selection of new-season sake, chosen to complement the changing flavours of our menu. Whether you're already familiar with Japanese sake or keen to explore something new, our team will be happy to recommend a glass to accompany your dishes.
